    • Chicken breast cooked at low temperature, vegetable tartlet (Parmesan, crushed tomatoes, vegetables, basil), carrots muslin with cumin
  • Tuesday
    • Basque Burger (beef, confit onion, piperade, Manchego), Saladin and straw potatoes
  • Wednesday
    • Poached hake fillet, green asparagus, potatoes gnocchi with Parmesan, pot au feu emulsion
  • Thursday
    • Beef and grilled vegetables millefeuille, Agria potatoes muslin with butter, grassouillet juice
  • Friday
    • A la carte
